What a sapphire screen is for
Sapphire is a strong medium blue. Blue is the hardest color for most panels to render evenly, so a full sapphire field is where banding and clouding tend to appear first.
The same mineral as ruby
Sapphire and ruby are both corundum, aluminium oxide, and pure corundum is colourless. Ruby is corundum coloured red by chromium; sapphire is every other colour corundum takes, most familiarly the blue produced by iron and titanium together. The naming is a historical convention rather than a mineralogical distinction: a red one gets its own name and everything else is a sapphire, including yellow, green and pink ones.
Why sapphire is on your phone
Corundum is the hardest natural material after diamond, which is why synthetic sapphire is used for watch faces, camera lens covers and some phone screen components. It resists scratching from sand and grit, which are largely quartz and softer than corundum. Manufactured sapphire is chemically identical to the gemstone and has been produced industrially for over a century, so the material on a watch is real sapphire rather than an imitation of it.
Deep blue as a screen colour
The colour named sapphire is a rich, slightly purple-leaning blue: blue high, red low, green lower still. It is darker than sky blue and more saturated than navy, sitting in a band that reads as a strong colour while remaining comfortable to look at. Light text works on it well. As with the other gemstone colours, what is missing is the internal refraction that gives a cut stone its depth, so this is the hue rather than the material.
